At Exeter Crown Court, 24-year-old Christopher Streluk pleaded not guilty to the attempted murder of Matthew Hewitt in May this year.
But he admitted the less-serious alternative charge of wounding Mr Hewitt with intent to cause him grievous bodily harm.
Prosecutor Richard Crabb said the pleas entered by Streluk, of Hillside Road, Paignton, were acceptable to the Crown.
Police were called to an address in Hillside Road at 3am on May 31 following a stabbing incident.
They found the victim, Mr Hewitt, a door steward, had suffered puncture wounds to his chest.
He was also left with wounds to his chest, head and hands and required 25 stitches.
Defence lawyer Ann Bellchambers asked for a pre-sentence report to address the issue of whether her client posed a danger to the public.
She said while her client had pleaded guilty, the offence could have been more serious.
"He is under no illusion as to what might happen to him," said Ms Bellchambers.
Judge Graham Cottle said: "The background needs to be considered along with the issue of risk."
He remanded Streluk in custody and he will be sentenced on October 10.
